Our very first barrel-aged chocolate bar made in collaboration with our friends at Revolution Brewing!

Revolution aged a Scotch Ale in whiskey barrels, previously aging Elijah Craig, Eagle Rare, and WhistlePig Rye, to produce VSO Gravedigger.  We filled this freshly dumped beer barrel with cacao from Chiapas, Mexico to take on the boozy, fruit-forward notes of the beer. We then roasted the cacao beans and refined the nibs with our stone melangers to produce a smooth, complex chocolate bar. We have a spread of barrels from Rev that are aging cacao as we speak, so this is just the first of many projects like this!
