Fennel (Foeniculum vulgare) is a perennial herb from the carrot family and Anise (Pimpinella anisum) is a flowering plant closely related to celery and parsley.
Taste and aroma of both botanicals have been compared to liquorice while Anise is a main ingredient in the production of spirits such as absinth, sambuca, and ouzo.
Both these varieties are harvested wild from the 5,000ft elevation on Alaheaakalā (Haleakalā) volcano on the island of Maui.
